Enzymes are biological molecules that act as scissors, cutting large food molecules into tiny pieces that can be absorbed into the blood. Amylase breaks starch into simple sugars. Pepsin breaks proteins into amino acids. Lipase breaks fats into fatty acids and glycerol. Each enzyme is specific — amylase only works on starch, not on protein. These enzymes are produced by digestive glands throughout the gut.
